Soup's On!

Am I the only person who gets excited about a new soup pot? My mother bought me a "maslan pan" from Lee Valley for Christmas and I couldn't wait to use it. Traditionally it is used in jam making (which seems so far away), but today I'm using it for soup. Chicken soup to be exact. I love making soup. It's just so easy - carrots, onions, celery as a base, then add your flavours. But what I find challenging about chicken soup is fitting the chicken carcass into a too small pot. This pan is fabulous! Everything fits, I can add as much liquid to the soup as I need without it boiling over.

I don't have a recipe for chicken soup. I add whatever I have on hand. The chicken was from a roast I did. I had celery, carrots, and onion. I added some leftover stock, topped up with water, then let it simmer for awhile. I'm thinking I'll add some rice or orzo near the end, along with some frozen peas and corn - I'm not sure what is in my freezer! Seasonings, too.

I'm looking forward to my annual jam-making this summer. This will make it so much easier and cut down on the mess that usually occurs when my jam boils over!
